General Overview, History, and Ecology: Water spinach is an important leafy vegetable throughout tropical Asia. The leaves and young shoots have a mild, slightly nutty spinach flavor. There are two strains of water spinach. The aquatic form, called pak quat or white-stem water spinach, has arrowhead-shaped leaves. It runs aggressively and roots at the nodes wherever it comes in contact with water or moist soil. The upland form, known as ching quat or green-stem water spinach, has narrower leaves and grows in an upright, less aggressive form. Water spinach is perennial in the tropics but is often grown as an annual, particularly the upland form.
